You open the manager, add the fuel tanks you want to transfer to and from, select which are transferring fuel in or out, and then press the button to start the transfer. You could calculate the lenght of their orbit as the altitude is visible in map mode (you would have to add radius of the Sun - check info icon). Then 2 x Radius x 3.14159 gives you the length of the orbit. Orbital velocity is visible in map.
