There is no switch to turn off the ECO/VCM mode but there has been discussion of disconnecting an engine oil pressure sensor so it will not enter the ECO mode. Current vehicles:

I am a true Honda fan. Currently own a 2007 Honda Pilot EX-L. If it only makes noise when cold started, for just a few seconds, that is oil filling the passageways, and is probably normal if it lasts just a couple seconds. If you stop and start the car again, it shouldn't make the noise, if this is the reason.
