Gigas have higher base damage then a Carcha and if there aren't any enemies spawning then the boss then the buff from Carcha's are pretty much useless. Though if there are enemies spawning then go for Carchas. carchas for ones with adds, ones without your choice. probably whatever you can find a better saddle bp for.

Situation dependent. Carchars are better if you’re in combat for a long time and killing things like an osd for super fast health regen and stacking damage greater than gigas. Gigas are better at having a powerful tame you can throw out instantly or using in a boss fight where you don’t have time to stack the carcha buff.
